Wrap half of it with duct tape. Works great! And cheap! I went from 160 to 215 degrees. More seriously, any thermostat (oil or coolant water, too, for that matter) works by blocking all or part of the flow which increases back pressure on the pump - not good for pump health.

Dan, there is an oil cooler thermostat that some of us are using from Perma-cool.
It works by-passing the oil through the oil cooler after the oil temp reaches 180
degrees. It lets the oil circulate through the engine until it reaches 180 degrees
so there is no blocking of the oil flow. The oil temps come up faster in cooler climates.
I have had one on my 912s for three years now and it works fine. I still need to block off some of air flow through the oil cooler to get the oil temp up over 200 degrees. I fashioned an aluminum plate that raps around my oil cooler and can be removed if need be but so far it works fine even in the warm Florida summers. Check with Lockwood that’s where I got my thermostat.

http://www.perma-cool.com/Catalog/Cat_page14.html
